A new restaurant is set to bring a taste of Chicago to Conway this spring, offering a menu of gourmet sandwiches and dishes that owner Corey Nelson says are simply not available in Arkansas right now.

Chicago Flamin Grill will be located at 812 Chestnut St., the former home of BMB Bakery, which recently relocated to 804 Front St. The restaurant is projected to open in mid-April, with early May as a fallback. Nelson, a Chicago native with 23 years of experience in the food industry, said the name came naturally from his roots and the style of food he specializes in.

“I was thinking Chicago Flamin Grill because most of my food is gourmet, Chicago-style sandwiches,” Nelson said. “That’s what we specialize in.”

The menu will center on Chicago staples, including the Chicago dog, the Italian beef, gyros, and Chicago pizza puffs. The restaurant will also serve fresh fried catfish, catfish steak, wings in a variety of flavors, and sides like fries, fried mushrooms, okra, hush puppies, and coleslaw.

The space will be set up primarily for carry-out orders, though a few tables and chairs will be available for customers who want to eat in. Nelson said he envisions it as a quick stop for lunch — a place where customers can grab a sandwich, take in some Chicago skyline décor, and get a feel for the city.

“You come on your lunch break and will be able to get a nice sandwich,” Nelson said.

Chicago Flamin Grill is expected to be open Monday through Friday from 10 a.m. to 8 or 9 p.m. Nelson said he is eager to introduce Conway to flavors he believes the city has been missing.

“I feel like a kid in a candy store,” he said.
