A new Mexican restaurant is set to open its doors in downtown Conway this spring, bringing fresh flavors and a late-night dining option to the heart of the city.
El Fuego Mexican Grill, owned by David Pavon, will be located at 1018 Oak St. and is projected to open in mid- to late April. The name translates to “the fire” in English. For Pavon, it’s a reflection of his Christian faith and the perseverance it has instilled in him and his family.
That family has deep roots in the restaurant industry. Pavon’s father spent 15 years as a head chef and will be running the kitchen at El Fuego, while his mother brings years of experience as both a server and manager. Before the restaurant, the family operated Portillo’s Taco Grill, a catering operation that served schools, weddings, and churches.
El Fuego will operate as a counter-service restaurant, meaning customers order at the counter and can expect a quick turnaround. The menu will feature burritos, tacos, bowls, nachos, street corn, and desserts, along with signature items like the El Fuego bowl, El Fuego burrito, and El Fuego nachos.
The downtown location was chosen largely for its foot traffic and visibility along Oak Street, and the setting shaped the restaurant’s entire concept. Rather than a traditional sit-down experience, Pavon envisioned something fast and casual — ideal for a quick lunch or a relaxed dinner out.
El Fuego will be open six days a week, closed on Sundays, with weekday hours until 10 p.m. and weekend hours until 10:30 p.m. Deliveries through DoorDash and Uber Eats will also be available.
