Kassi’s Cookies Coming Downtown

Kassi’s Cookies, a Mayflower-based bakery, is opening a shop in downtown Conway at 1115 Oak St. in the Halter Building.

The shop will open Nov. 5.

Owner Kassi Posey said her Mayflower location keeps getting busier and the size made it difficult to accommodate customers, so she made the decision to expand into Conway.

“We have a large base of customers there, we have family there, we’ve gone to church there, and we love the community and atmosphere of downtown,” she said. “We’re excited to be a part of that growth.”

Kassi’s Cookies will offer a host of baked goods, including french macrons, gourmet cookies, brownies, cupcakes, muffins and cake slices. The shop’s infamous oatmeal cream pies will also be available at the Conway location. Not to mention, ooey gooey butter cake bars.

“We’re passionate about being involved in the community and are always looking for ways to collaborate with local business owners,” Posey said.

The Conway location will also have coffee — with beans from Zeteo Coffee — including lattes and macchiatos, available hot or iced.

Posey said the expansion will allow the bakery to explore catering and wholesale opportunities. She and her husband, Caleb, have purchased a horse trailer they plan to outfit as a mobile Kassi’s Cookies and make available for events and weddings.

Kassi’s Cookies will be open 10 a.m. to 6 p.m. Tuesday through Thursday and 10 a.m. to 8 p.m. Friday and Saturday.
